Cooking really isn’t my passion. I can follow a recipe and get myself by, but honestly my husband is a significantly better cook. I do love to bake desserts though. Anything with chocolate makes me happy. Over the years I’ve cultivated a few very quick and easy recipes that I can whip up in less than an hour for various functions. I’m rarely on the ball enough to cook something the night before, so most of my desserts are on the simple side.
My Butterscotch/chocolate bars are a personal favorite. I’ve never gone home with any leftovers, so I think they are a success.
1 yellow cake mix – I use whatever type is on sale
½ cup melted butter
Mix ingredient together and pat flat in a greased 13×9 pan. Cook for 7-10 minutes at 350. I’ve noticed that some cake mixes take longer to cook then others, but can’t remember which brands are which. The crust is done when the edges start to brown and the crust rises slightly.
Rinse out your mixing bowl and combine:
1 can of sweetened condensed milk
1 teaspoon vanilla
Set the mixture to the side and pull out any toppings you would like to use. I typically use any of the following:
Milk chocolate chips
Semi-Sweet chocolate chips
White chocolate chips
Dark chocolate chips
Skor candy chips
I’ve also used nuts and coconut, but only when I know people like these ingredients.
Sprinkle your topping’s on the crust and then add a layer of the condensed milk mix, repeat until you have used all of your milk mix.
Cook for 16-24 minutes at 350. Remove from oven when the edges brown slightly and the milk mix is no longer runny.
I recommend waiting to cut them until they are cool. They are best when refrigerated. Enjoy!
