As previously mentioned I’m not much of a cook, but I do love to bake. I also love bananas, but I only like them if they are firm and fresh which means I used to waste a lot of bananas. Now I stick my left over bananas in the freezer and use this recipe whenever they start to stack up.
This is a super easy to make desert. It will take you less than 10 minutes to throw together, the rest is baking time.
Banana Chocolate Chip Bars
2 cups all Purpose Flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup butter or margarine, softened
2/3 cup granulated sugar
2/3 packed brown sugar
1 teaspoon vanilla extract
3 medium ripe bananas, mashed
2 cups semi-sweet chocolate chips (the recipe calls for mini-morsels, but I use regular size chips)
Combine flour, baking powder and salt in medium bowl (I don’t actually mix this in a separate bowl. I just add the baking powder and salt gradually as I mix in the flour). Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Beat in bananas and egg. Gradually beat in flour mixture; stir in chocolate chips. Spread into greased 15×10 inch jelly roll pan.
Bake in preheated oven at 350 degree oven for 20-30 minutes or until wooden pick inserted in center comes out clean.
I don’t have a 15×10 pan and like thicker bars anyway, so I typically use a 13×9 pan and cook it for 30-33 minutes.
